One pot, three days
A short list of things that survive a long trip without a cooler: dried lentils,
hard cheese, flatbread, and a jar of decent olive oil. Between them you can put
together something warm every evening without carrying a second bag.
The trick is salt. Carry more than you think, in a container that closes properly.
On keeping coffee simple
Grind at home, carry it in a sealed jar, use a cloth filter. Anything more
elaborate turns into one more thing to wash in cold water.
The two-pan question
For two people, one wide pan beats a pot and a skillet. You lose the ability to
boil and fry at once, and gain a kilogram of not carrying the second pan.
